One True Pairing 'ship: changes with the tides. Right now, probably Giles/Anya tied with Spike/Angel.
Canon 'ship: Spike/Buffy (and Angel/Darla, Angel/Cordelia, Angel/Spike - yes, it's canon, honestly - Willow/Oz, Willow/Kennedy, and pre-IWRY B/A)

"You are one sick bastard" 'ship: Connor/Wesley, Connor/Angel
"I dabble a little" 'ship: absolutely everything. Angel/Willow, Giles/Oz, Buffy/Giles, Willow/Giles, Oz/Tara, Dawn/Tara, millions of others...
"It's like a car crash" 'ship: Angel/Darla. (I'm taking car crash to mean I love this ship madly but it will never, ever end well)
"Tickles my fancy but not quite sold yet" 'ship: Spike/Xander
"Makes no canon sense but why the hell not" 'ship: Spike/Tara
"Everyone else loves it but I just don't feel it" ship: Willow/Tara
